Sushi without raw fish
Sushi does not automatically mean raw fish. The catalogue includes entries built around cooked prawn, eel, octopus, egg, tofu and vegetables, as well as rolls whose listed version contains no raw fish.
Every card below is marked as containing no raw fish in the SushiDex dataset. That label describes the catalogue version, not a guarantee about every restaurant recipe or cross-contact in a kitchen.
Open a detail page to check the usual ingredients and aliases, especially for Western rolls whose sauces and toppings can vary.
How to recognize cooked and plant-based choices
Cooked seafood
Ebi commonly refers to prawn, while unagi and anago refer to eel preparations. Tempura entries use a fried filling and their detail pages identify the other usual ingredients.
Egg, tofu and vegetables
Tamago uses egg, inari uses a seasoned tofu pouch, and simple avocado, cucumber or pickled-vegetable rolls avoid raw-fish ingredients in the catalogue.
Check commercial roll names
California, Tiger and other named rolls are not standardized. Read the specific card because one restaurant may add raw toppings where another does not.
Confirm the final menu description
